Grilled Herbed Lamb




Grilled Herbed Lamb Cutlets

Ingredients
• 450g lamb cutlets
• 1 egg white, lightly beaten
• 50g breadcrumbs

Marinade
• Salt and freshly ground black pepper
• 1 tsp dried rosemary
• 1 tsp dried oregano
• 1 tbsp olive oil

Condiments
• 1 sweet corn cob, cut into 2cm thick rounds
• Freshly ground black pepper
• A handful mixed salad
• 80g fennel, diced
• 1 tbsp lemon juice
• 1 tbsp olive oil
Method
Wash and dry lamb cutlets well. Blanch in hot water for 2-3 minutes, then drain and season with marinade. Drip in beaten egg white and roll in breadcrumbs. Pat the crumbs on firmly.

Line a rack with greased aluminium foil and arrange the cutlets over. Grill over preheated oven at 200°C for 6-7 minutes each side.

Grill sweet corn pieces for 8-10 minutes. Sprinkle with a dash of freshly ground black pepper. Toss salad leaves and fennel with a mixture of lemon and olive oil.

Serve condiments with the grilled lamb cutlets.
It also suitable for dinner with your love one in a romantic situation.

Floods In Six Sabah Districs

Floods In Six Sabah Districts Under Control, Says Musa
KOTA KINABALU, Jan 19 (Bernama) -- The flood situation in six districts in Sabah is under control with rivers in several areas showing a decline in water levels, Chief Minister Datuk Seri Musa Aman said.

The six districts are Kota Marudu, Kinabatangan, Kota Belud, Beluran, Telupid and Tongod.

Musa, who is also the State Security Committee chairman, said the floods in Kota Marudu started on Thursday, while the floods in the five other districts started on Saturday following continuous rain.

"The Meteorological Department has forecast that intermittent heavy rain is expected to persist until today affecting Beluran, Telupid, Kinabatangan and Pitas and could cause flooding," he said.

He was speaking to reporters after attending the Chief Minister's Department and Finance Ministry's monthly gathering at the State Legislative Assembly Building here Tuesday.

Musa said among the measures taken to help the victims was providing evacuation centres and ensuring that all forms of assistance, including food, were sufficient.

He said agencies and departments involved in rescue operations including police, the armed forces, fire and rescue department, Rela and district offices would continue to be mobilised in the flooded areas.

"All logistics requirements of these agencies are sufficient and are on standby to face any eventualities," he said.

Musa said elected representatives had also been visiting the victims and providing assistance.

There are 2,425 people still in evacuation centres comprising 1,500 in Kota Marudu, 594 in Togod, 77 in Kinabatangan and 254 in Kota Belud.

He reminded the people in the flooded areas to be on the alert and be ready to be evacuated when ordered by the authorities.

Bahulu Berayam / Engkak (Savoury Sponge With Chicken)

Also known as Engkak, this snack is often prepared for royalty in Pahang, Perak and Kedah and on special occasions such as wedding celebrations.
Ingredients
Filling:
• 10 dried chillies (cut into 1cm slices, seeded and soaked in hot water to soften)
• 5 red chillies (sliced)
• 7 shallots (peeled)
• 3 cloves garlic (peeled)
• 1 tbsp ground fennel
• 3 tbsp ground coriander
• 200g chicken breast meat (cooked and shredded)
• 750ml coconut milk (from 600g grated coconut and sufficient water)
• Salt (to taste)

Batter:
• 5 eggs
• 150g castor (superfine) sugar
• 90g plain (all purpose) flour (sifted)
• 125ml coconut cream (from 400g grated coconut)

Equipment:
• Bahulu mould


Method
Prepare filling. Grind (process) dried chillies, red chillies, shallots, garlic, ground fennel and ground coriander into a smooth paste.

Combine paste, shredded chicken and coconut milk in a pan. Stir over medium heat until quite dry. Season with salt. Then remove and set aside to cool.

Prepare batter. Whisk eggs and sugar until pale. Add flour and mix to a smooth batter. Divide batter into two portions. Add coconut cream to one portion and stir well (for the top of the sponge cake) and leave the other portion plain.

Place bahulu mould in a preheated oven with upper and lower heating elements at 200°C. Lightly grease mould with a little cooking oil.

Pour plain batter to fill one-third of mould. Bake for 2 to 3 minutes or until the top has set slightly.

Spoon filling onto surface and pour in coconut milk batter, filling mould almost to the brim.

Return mould to the oven and bake for 15-20 minutes or until cooked. If you want the top to be slightly browned, place under a grill for the final 3 to 4 minutes.

Remove from mould and serve.

Ayam Masak Merah

Ingredients
• 1 kg chicken, chopped into bite-sized pieces
• 2 onions, quartered
• 3 potatoes, cut into wedges
• 2 tomatoes, quartered
• 1 small can tomato paste
• 150ml water
• 4cm piece cinnamon stick
• 4 cloves
• 1 star anise
• 3–4 tbsp oil

Ground spices (A):
• 10 shallots
• 4 cloves garlic
• 12 red chillies, seeded
• 3cm ginger
• 2 tbsp coriander powder
• 1 tsp cumin powder

Seasoning (B):
• 1 tsp salt or to taste
• 1 tbsp sugar or to taste
Method
Heat oil until hot, sauté ground spices (A) until fragrant. Add in cinnamon stick, cloves and star anise. Fry for 1–2 minutes.

Add onions, tomato paste and potatoes. Stir-fry well. Mix in water and tomatoes. Cook until mixture starts to boil. Reduce heat and simmer until chicken is tender and gravy turns thick.

Add seasoning to taste and serve this mildly spiced curry dish with bread slices or with plain rice.

Ayam Golek

• 1.5kg chicken
• 1 tsp salt
• 200ml thick coconut milk

Ground spices
• 200g shallots
• 4 cloves garlic
• 3 stalks lemon grass
• 20g galangal
• 15g ginger
• 20g fresh turmeric
• 120g fresh red chillies
• 1 tsp white peppercorns
• 1 tsp cumin
• 2 tsp fennel

Seasoning
• 1 tsp salt
• 1 tsp sugar
• ½ tsp monosodium glutamate






Method
Chop the chicken into 4 quarter pieces and score a few diagonal cuts on each piece. Rub with salt.

Combine coconut milk with the ground spice ingredients in a saucepan over a medium low heat. Bring to a low simmering boil. Add seasoning.

Dish out and combine with the chicken pieces. Leave aside to marinate for at least 1-2 hours.

Grill the chicken pieces (for an authentic taste, grill over burning embers) and brush with remaining marinade when grilling, until meat is cooked through and lightly browned.

Asam Fish Curry

Ingredients
• 1kg mackerel (ikan kembong)
• 250g ladies fingers
• 1 tomato, quartered
• 3 sprigs polygonum leaves (daun kesum)
• 4 tbsp tamarind paste (asam jawa) mixed with 500ml water
• 1 wild ginger bud, halve and smash stem
• 2 pieces dried tamarind skin
• 5 tbsp oil

Ground ingredients
• 12 shallots
• 8 fresh red chillies
• 4 slices galangal
• 1cm piece fresh turmeric
• 2cm square belacan, toasted
• 2 stalks lemon grass

Seasoning
• ¾-1 tsp salt or to taste
• ½-1 tsp sugar or to taste
Method
Heat oil in a deep saucepan and sauté ground ingredients and wild ginger bud halves and polygonum leaves until aromatic and the oil rises.

Add asam jawa juice and bring to the boil. Add ladies fingers, dried tamarind skin and simmer for 8-10 minutes. Put in mackerel and cook for 10 minutes. Add tomato and adjust seasoning to taste. Dish out and serve with hot plain rice immediately.

My Trip To Labuan


On that early morning 16062009,i wake up at 1600hours before i go to labuan to meet my friends from Plkn Kem Wawasan Papar,Sabah.After take my bath i start my car engine beside that i checked my engine condition before start my journey to Labuan I feed my cats then at 1700hours I am on my way to kota kinabalu directly to putatan without waste my time because I want to follow the 2030 ferry from Menumbok to Labuan which I haven’t buy a ticket yet.That is the reason why I’m in a hurry to arrive at Menumbok..At 1930 I arrive Menumbok Terminal then buy a ticket at the counter after that I enter the ferry.From what I seen not only cars only their also lorry and a big bus also go to Labuan.I arrive at the Labuan kastam

At night we go to a good place to have a dinner with your family or friends like me.To try their menu at here Uphill Restaurant.After park the car we get a table for five person to have a dinner.Well I tell you should try their foods and kind a cheap also only five of us I pay RM95++. After the dinner we went to Ujana Kewangan(UK) is like a shopping complex at Labuan there also got KFC we stop at KFC eat some late nite snacks before went home as for me the night is still young so how about go for the night club that my friend familiar of night clubs.whnot my friend said after this we go to for sight seeing.

I went back to my hotel at 4 am in the morning before went back to kk I went to a cheap store then bought a chocolate for my family at home and some clothes for my litte brother.
